Friday night is always a drag in the kitchen...the temptation to just grab those take out menus or go to the closest restaurant is always lurking in your mind....save $ or have a treat after a hard week of work? The question remains...for stay at home mom's and working mom's and any housewife--what to eat on Friday night?
Here is a healthy, tasty alternative to eating out---rice noodles with a yummy sauce! Unforunately, our kids didn't have the same level of enjoyment that we did :-( but I enjoyed it!!!!!!! I did put my own twist on the recipe....I like to clean the refrigerator out by the end of the week and stir-fry or soup is a great, frugal and healthy way to use up those veggies so I'll probably make it different every time :-)! Add your own flare to this entree :-)
8oz of rice noodles (cook uncovered 1 minute) drain, rinse, drain again
1/2 c. creamy (all natural) PB
2 T soy sauce (
1/2tsp ground ginger or 1tsp ginger root grated
1/2 chicken boullion(I use natural boullion from Sonnewald's--No MSG!)
2 stalks green onion, sliced
2T fresh cilantro, sliced (did you know eating cilantro can flush metal out of your body?)
1 med red or green pepper sliced
1 lb chicken breast stir fried in olive oil
Now what I did was stir fry celery and pepper in olive oil and then the chicken.
I cooked the PB, soy sauce and chicken broth until warm and then served it in a separate dishes from the chicken...so this meal could be vegetarian or meat. I then layered rice noodles, sauce, chicken, veggies and topped with fresh onions and cilantro. Not exactly the way the recipe was written but it tasted good to me!

Gourmet spinach?
I'm sure we all would love to have a totally healthy alkaline diet but sometimes those green vegetables just don't look that appealing....juicy spinach? uggh...Well, I found a delicious, healthy recipe that makes a great side dish to any meal or even a main meal for those of you who are vegetarians :-)
Enjoy!
Spinach Mashed Potatoes
Peel, cook and mash 6-8 large potatoes
Add:
1 tsp salt
1/4c. butter
1/4 tsp pepper
1 T chopped chives(or other seasoning)
3/4c. yogurt or SC
4oz cream cheese
1-10oz frozen spinach
(chopped, cooked and well drained)
I used my Kitchen Aid Mixer--a blender would also work to incorporate everything. Add milk if too stiff--put in casserole.
Sprinkle with: 1 c. cheddar cheese
Bake 400 degrees for 20min.
Note: can be made a day ahead and baked just before serving at 400 degrees for 30-35min or even frozen for later! Serves 8-10
