The dreaded question that looms in front of every housewife daily--what to make for supper? What to get out of the freezer? what recipe should I use? Do I need to go to the store? If our men had any idea of how much we stress, slave and suffer over our menu's! My goal with this blog is to help you (and me!) get some organization in our kitchen planning and actually enjoy planning the meals, or at least not cry over the menu :-)
I would like to have a recipe of the week....either crockpot, quick meals, healthy meals or one dish meals---I will share tips, ideas and recipes that I use in my kitchen and I am hoping that everyone else will also contribute their ideas too.
The recipe for this week is Spinach Quiche...a great vegetarian meal to make to save money and use up those eggs! The crust can be a simple recipe out of Betty Crocker or you can go to a discount store like Price Rite or Sharp Shopper and sometimes find Pillsbury pie crusts for $1! This is also a great recipe to sneak in those veggies and protein for picky toddlers!
Light and fluffy Spinach quiche
1/2 c. light mayo 1 (10oz pkg) frozen chopped spinach,
1/2 c. milk thawed and squeezed dry
4 eggs, lightly beaten 1/4 c. chopped onion
8oz shredded cheddar cheese 1 (9in) unbaked pie shell
Directions:
Pre-heat oven to 400 degrees. Line a cookie sheet with foil.
In a large bowl, whisk together mayo and milk until smooth---add eggs. layer spinach, cheese and onion in pie shell, making several layers of each. Pour in egg mixture. Place quiche on cookie sheet--cover quiche with foil. Bake 45min..remove foil and bake another 10-15min or until top is golden brown and filling is set. (I had to bake a little longer to get it to set up so allow extra time)
I like to have one vegetarian meal a week--it saves money on the meat budget and it's also fun to be creative with new recipes! Does anyone else have their favorite one to add?
